- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
For Assembly:
- 9 lasagna noodles, cooked according to package instructions
- 1 cup shredded mozzarella cheese
- Fresh basil or parsley for garnish

White Sauce:
- In a saucepan, melt the unsalted butter over medium heat. Add the flour and whisk continuously to form a smooth paste.
- Gradually pour in the whole milk, whisking constantly to avoid lumps. Continue cooking and whisking until the sauce thickens.
- Add salt, black pepper, garlic powder, onion powder, and dried oregano to the white sauce. Stir well and remove from heat.
Chicken Filling:
- In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until softened.
- Incorporate the shredded chicken, followed by the thawed and drained spinach. Cook until heated through.
- Stir in ricotta cheese, shredded mozzarella, and grated Parmesan until the cheeses are melted and the mixture is well combined. Season with salt and black pepper to taste.
Assembly:
- Preheat your oven to 375°F (190°C).
- In a greased baking dish, spread a thin layer of the white sauce. Place three cooked lasagna noodles on top.
- Layer half of the chicken filling over the noodles, followed by a portion of the white sauce. Repeat the process with another layer of noodles, the remaining chicken filling, and more white sauce.
- Top the lasagna with the final layer of noodles, remaining white sauce, and shredded mozzarella cheese.
- Bake in the preheated oven for 25-30 minutes or until the top is golden and bubbly.
