For the Crepes:
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup milk

For the Lemon Mascarpone Filling:
- 8 ounces mascarpone cheese
- 1/4 cup powdered sugar
- Zest of 1 lemon
- 2 tablespoons fresh lemon juice
For Serving:
- Fresh berries
- Powdered sugar for dusting
Instructions
- In a blender, combine the crepe ingredients – all-purpose flour, eggs, milk, water, melted butter, lemon zest, sugar, and a pinch of salt. Blend until the batter is smooth. Let it rest for at least 30 minutes.
- Heat a non-stick skillet or crepe pan over medium heat. Pour a small amount of batter into the pan, swirling it to coat the bottom evenly. Cook for about 1-2 minutes until the edges begin to brown, then flip and cook the other side. Repeat until all the batter is used.
- In a bowl, mix together mascarpone cheese, powdered sugar, lemon zest, and fresh lemon juice to create the lemon mascarpone filling.
- Spoon a generous portion of the lemon mascarpone filling onto each crepe, spreading it evenly.
- Fold or roll the crepes and place them on a serving plate.
- Top the Lemon Crepes with additional lemon zest, fresh berries, and a dusting of powdered sugar.
