Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a medium bowl, whisk together the flour, baking powder, and baking soda. Set aside.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with sour cream. Begin and end with the dry ingredients. Mix until just combined. Fold in the lemon zest.
  6. In a separate bowl, prepare the cream cheese filling by beating together the softened cream cheese, sugar, egg, flour, and lemon juice until smooth.
  7. Spread half of the cake batter into the prepared baking pan. Dollop the cream cheese filling over the batter, then spread the remaining batter over the cream cheese layer.
  8. For the streusel topping, combine flour, sugar, and chilled butter in a bowl. Use your fingers or a pastry cutter to create a crumbly texture. Sprinkle the streusel over the cake batter.
  9. Bake in the preheated oven for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  10. While the cake is cooling, prepare the glaze by whisking together powdered sugar and fresh lemon juice until smooth.
