Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a medium bowl, whisk together the flour, baking powder, and baking soda. Set aside.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with sour cream. Begin and end with the dry ingredients. Mix until just combined. Fold in the lemon zest.
- In a separate bowl, prepare the cream cheese filling by beating together the softened cream cheese, sugar, egg, flour, and lemon juice until smooth.
- Spread half of the cake batter into the prepared baking pan. Dollop the cream cheese filling over the batter, then spread the remaining batter over the cream cheese layer.
- For the streusel topping, combine flour, sugar, and chilled butter in a bowl. Use your fingers or a pastry cutter to create a crumbly texture. Sprinkle the streusel over the cake batter.
- Bake in the preheated oven for 40-45 minutes or until a toothpick inserted into the center comes out clean.
- While the cake is cooling, prepare the glaze by whisking together powdered sugar and fresh lemon juice until smooth.
