Instructions
- In a bowl, combine graham cracker crumbs, melted unsalted butter, and granulated sugar for the crust. Press the mixture into a pie dish, forming an even crust along the bottom and sides. Place the crust in the freezer to set while preparing the filling.
- In a saucepan, combine blueberries, granulated sugar, cornstarch, water, and lemon juice for the blueberry filling. Cook over medium heat, stirring continuously, until the mixture thickens and the blueberries burst, releasing their juices. Allow the filling to cool to room temperature.
- Pour the cooled blueberry filling into the prepared graham cracker crust, spreading it evenly.
- Place the pie in the freezer and let it set for at least 4 hours or until firm.
- In a mixing bowl, whip the heavy cream until soft peaks form. Add powdered sugar and vanilla extract, continuing to whip until stiff peaks form.
- Remove the frozen blueberry pie from the freezer and spread the whipped cream over the blueberry filling.
- Optionally, garnish the pie with additional fresh blueberries or mint leaves.
- Return the pie to the freezer for at least 1-2 hours or until the whipped cream is set.
