- 1 cup orzo
- One bunch of asparagus, thinly sliced into small pieces.
- 1 cup crumbled feta cheese
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Cook the orzo according to package instructions. Drain and set aside.
- Heat the olive oil in a big skillet over medium heat.. Add the asparagus pieces and sauté until tender-crisp, about 5-7 minutes.
- In a large mixing bowl, combine the cooked orzo, sautéed asparagus, crumbled feta, lemon juice, and lemon zest. Toss gently to mix.
- Season with salt and pepper to taste. If desired, drizzle with additional olive oil..
- Garnish with fresh parsley, if using.
- Serve the Orzo with Feta & Asparagus warm as a delightful side dish or a light main course. Enjoy!
