- 1 1/4 cups milk (any kind, but whole milk makes them richer)
- 1 large egg
- 3 tablespoons unsalted butter, melted (plus more for greasing the pan)
- 1 teaspoon vanilla extract (optional, for extra flavor)
Instructions
- Mix Dry Ingredients:
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- Combine Wet Ingredients:
- In another bowl, beat the egg lightly with a fork, then whisk in the milk, melted butter, and vanilla extract (if using).
- Combine Wet and Dry Ingredients:
- Pour the wet ingredients into the dry ingredients. Stir until just combined. It’s okay if the batter is a little lumpy; do not overmix.
- Preheat Your Pan or Griddle:
- Heat a non-stick pan or griddle over medium heat. Brush with a little melted butter or oil.
- Cook the Pancakes:
- For each pancake, pour about 1/4 cup of batter onto the griddle. Wait until bubbles form on the surface and the edges look set, about 2-3 minutes.
- Flip the pancake and cook for another 1-2 minutes on the other side, until golden brown.
- Serve Warm:
- Serve the pancakes warm with your favorite toppings, such as maple syrup, fresh berries, sliced bananas, or whipped cream.
