Ingredients

Main Ingredients

  • 2.5 cup all-purpose flour
  • 1 cup granulated sugar You can adjust based on sweetness preference.
  • 0.5 cup unsalted butter Make sure it's softened for easy mixing.
  • 1 cup milk Use whole milk for creamier texture.
  • 3 large eggs Room temperature works best.
  • 2 tsp baking powder
  • 1 tsp vanilla extract A splash goes a long way!
  • 2 cup fresh blueberries Rinse and dry before use.
  • 1 cup whipped cream For topping.

Instructions

Preparation Steps

  • Preheat your oven to 350°F (175°C) and grease two round cake pans. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. This will take about 3-4 minutes.
  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract. In a separate bowl, mix together the flour, baking powder, and a pinch of salt.
  • Gradually add the dry ingredients to the creamed mixture, alternating with the milk. Be sure to mix just until combined, avoiding overmixing. Gently fold in the blueberries.
  • Divide the batter evenly between the prepared pans and smooth the tops. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for about 10 minutes before transferring to wire racks to cool completely.
  • Once cooled, layer the cakes with whipped cream and additional blueberries between them, and on top. Serve it up fresh and enjoy this scrumptious treat!
