Preparation Steps
Start by cooking the bacon in a large skillet over medium heat until it's nice and crispy. Once done, transfer the bacon to a plate lined with paper towels to drain, but keep the drippings in the skillet for flavor.
In the same skillet, add the chopped onions and sauté until they're soft and translucent. This should take around 5-7 minutes.
Next, crumble the cooked bacon and return it to the skillet with the onions. Add in the brown sugar, maple syrup, apple cider vinegar, bourbon, black pepper, and red pepper flakes.
Stir everything together and let it simmer on low heat for about 30-50 minutes, stirring occasionally until it thickens up and looks wonderful.
Once thickened, remove from heat and let it cool slightly before transferring to jars. This jam can be stored in the fridge for weeks, but it’s so tasty you might finish it quickly!
