Preparation Steps
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. In a bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Mix in the egg and vanilla extract until well combined.
In another bowl, whisk together the flour and cocoa powder. Gradually add this dry mixture to the wet ingredients, mixing until just combined. Scoop out tablespoon-sized portions of dough and roll them into balls before placing them on the prepared baking sheet.
Bake the cookies in the preheated oven for about 10 minutes, until they are set but still soft in the center. Allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack.
Once cooled, spread a generous layer of creamy peanut butter on the bottom of half of the cookies. Top each with another cookie to create delicious sandwich cookies. For added sweetness, dust with powdered sugar if desired.
