  • 1.5 lb ground beef You can substitute with turkey if preferred.
  • 1 can refried beans Any brand works well.
  • 1 can taco seasoning Feel free to use homemade seasoning.
  • 12 oz lasagna noodles No-boil noodles save time.
  • 2 cup shredded cheese Mexican blend or cheddar is recommended.
  • 1 cup salsa Choose your preferred spiciness level.
  • 1 cup sour cream Can be substituted with Greek yogurt.
  • 0.5 cup green onions Chopped, for garnish.

Instructions

Preparation Steps

  • Start by preheating your oven to 375°F. In a large skillet, brown the ground beef over medium heat until fully cooked. Drain any excess fat and stir in the taco seasoning along with a splash of water. Allow it to simmer for a few minutes.
  • Layer the bottom of a baking dish with some of the salsa. Then, add a layer of the lasagna noodles, followed by half of the cooked beef mixture, refried beans, and cheese. Repeat the layers, finishing with noodles, the rest of the salsa, and a generous layer of cheese on top.
  • Cover the dish with foil and bake in the preheated oven for 25 minutes. After that, remove the foil and bake for another 5-10 minutes until the cheese is bubbly and golden.
  • Once done, let it cool for a few minutes before slicing. Serve with a dollop of sour cream and a sprinkle of green onions on top for added freshness.

This dish can be made ahead of time and stored in the fridge for a quick meal later on. Enjoy!
