Ingredients

Main Ingredients

  • 1.5 lb pork shoulder Trim the excess fat for better flavor absorption.
  • 4 cup chicken broth Feel free to use homemade for extra flavor.
  • 3 tbsp miso paste Red or white miso works beautifully.
  • 2 tbsp soy sauce Use low-sodium if preferred.
  • 1 tbsp sesame oil This adds a lovely nutty flavor.
  • 4 oz ramen noodles Fresh ramen noodles are ideal.
  • 2 cup baby spinach Spinach will wilt nicely in the hot broth.
  • 1 cup scallions Slice them thin for garnish.
  • 2 large soft-boiled eggs Cook these to your preferred doneness for a creamy touch.

Instructions

Preparation Steps

  • Start by expertly searing the pork shoulder in a large pot over medium-high heat until it’s nicely browned on all sides. This will enrich the flavor of the broth.
  • After searing, pour in the chicken broth and add in the miso paste, soy sauce, and sesame oil. Let it simmer for at least 30 minutes until the pork is tender.
  • While the broth simmers, cook the ramen noodles according to the package instructions, then drain and set aside.
  • Once the pork is tender, remove it from the pot, shred it into bite-sized pieces, and return it to the broth along with the baby spinach. Let it wilt for about 2 minutes.
  • To serve, divide the cooked ramen noodles into bowls, ladle the hot soup over, and top with shredded pork, scallions, and soft-boiled eggs for a beautiful finish.

Notes

This ramen is perfect for meal prep — just keep the noodles separate from the broth until you're ready to enjoy!
