  • Start by preheating your oven to 400°F (200°C). In a bowl, combine the diced peaches with sugar, lemon juice, and cinnamon; gently mix and set aside to let the flavors meld.
  • Roll out your pie crusts and cut them into squares. Fill the center of each square with a spoonful of the peach mixture.
  • Fold over the corners to create little pouches and pinch the edges to seal them tightly.
