  • 1 large egg
  • 2 cup all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp pumpkin pie spice This gives the cookies that cozy fall flavor.
  • 0.5 tsp salt

Preparation Steps

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. In a large bowl, combine the pumpkin puree, granulated sugar, brown sugar, vegetable oil, and egg. Mix until smooth.
  • In a separate bowl, whisk together the flour, baking soda, baking powder, pumpkin pie spice, and salt. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  • Using a cookie scoop or tablespoon, drop the dough onto the prepared baking sheet, leaving some space between each cookie. Bake for 10 to 12 minutes, or until the edges are set.
  • While the cookies bake, prepare the caramel frosting. In a small saucepan, melt together butter, brown sugar, and cream, stirring until it bubbles. Let it simmer for a minute, then remove from heat and whisk in powdered sugar until smooth.
  • Once the cookies have cooled slightly, spread a generous layer of the caramel frosting on top of each cookie. Enjoy your delicious pumpkin cookies!
