To start, preheat your oven to 350°F (175°C). In a large bowl, cream together the softened butter, sugar, and brown sugar until light and fluffy. Add in the pumpkin puree, egg, and vanilla extract, mixing until well combined.
In another bowl, whisk together the flour, baking powder, pumpkin pie spice, and salt. Gradually mix this dry mixture into the wet mixture until just combined, being careful not to overmix.
Scoop tablespoon-sized balls of dough onto a prepared baking sheet, leaving some space between each cookie. Bake for about 10 minutes or until the edges are lightly golden.
