  • ¾ tsp baking soda
  • ¼ tsp baking powder
  • ¾ tsp fine sea salt
  • cup white chocolate chips
  • 1 cup roasted salted cashews roughly chopped

  • Preheat oven to 350°F. Line two baking sheets with parchment.
  • Beat butter, brown sugar, and granulated sugar until creamy and light.
  • Mix in egg and vanilla until smooth.
  • Whisk flour, cornstarch, baking soda, baking powder, and salt.
  • Add dry ingredients to wet; mix on low just combined.
  • Fold in white chocolate chips and chopped cashews.
  • Scoop 2-tbsp portions of dough; space 2 inches apart.
  • Bake 9–11 minutes until edges set and centers look pale.
  • Cool on sheets 5 minutes, then move to a rack.

Notes

Swap cashews with macadamias or chopped almonds, and try half white chips, half semisweet for contrast. Prefer thicker cookies? Chill the scooped dough 20–30 minutes before baking. Unsalted cashews work—just add a pinch more salt. For extra flavor, toast cashews at 350°F for 5–7 minutes, cool, then chop.
