  • 1 cup blueberries Fresh or frozen
  • 1 cup granulated sugar
  • 2 large eggs Lightly beaten
  • 1 tsp vanilla extract
  • 1.5 cup all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt

Preparation Steps

  • Start by preheating your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper for easy removal later.
  • In a large bowl, whisk together the melted butter and sugar until well combined. Then, blend in the mashed bananas, eggs, and vanilla extract, mixing until smooth.
  • In another bowl, mix the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, stirring just until incorporated. Don't overmix!
  • Gently fold in the blueberries, being careful not to burst them. Transfer the batter into your prepared loaf pan.
  • Bake in the preheated oven for about 60 minutes or until a toothpick inserted in the center comes out clean. Allow it to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

This bread is delicious on its own, but you can also serve it with a dollop of butter or cream cheese for extra flavor!
