Preparation Steps
Start by preheating your oven to 375°F (190°C). While it's warming up, season the chicken breasts with salt and pepper.
In a large oven-safe skillet, heat the olive oil over medium heat. Add the seasoned chicken and cook until golden brown, about 5-7 minutes on each side.
Once browned, lower the heat and spread the Boursin cheese generously over the chicken. Top with fresh spinach and halved cherry tomatoes.
Transfer the skillet to the preheated oven and bake for about 20 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
