Ingredients

Main Ingredients

  • 1.5 lb ground beef Use lean ground beef for less grease.
  • 1 cup chopped onion
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 4 cups beef broth Low sodium broth works well.
  • 1 cup potatoes, diced Any type of potato is fine.
  • 8 oz cream cheese Softened for easier mixing.
  • 2 cups shredded cheddar cheese Feel free to mix with other cheeses.
  • 1 tbsp garlic powder
  • 1 tsp black pepper
  • 1 tsp salt Adjust to taste.

Instructions

Preparation Steps

  • Begin by browning the ground beef in a skillet over medium heat until it's fully cooked. Drain any excess grease.
  • Transfer the cooked beef to your crock pot, then add the onion, carrots, celery, and diced potatoes.
  • Pour in the beef broth and sprinkle in the garlic powder, salt, and black pepper. Stir everything gently to combine.
  • Cover the crock pot and set it on low heat. Let it cook for about 4 hours or until the vegetables are tender.
  • Shortly before serving, stir in the cream cheese and shredded cheddar, mixing well until the cheeses have melted into a creamy consistency.
  • Give it a taste and adjust seasoning if needed. Serve warm, and enjoy your hearty soup!

Notes

This soup not only warms you up, but it's a great way to use up leftover vegetables you might have on hand.
