  • 2 cloves garlic minced for flavor
  • 2 carrots diced adds sweetness
  • 2 stalks celery diced
  • 1 cup green beans trimmed
  • 1 zucchini diced
  • 6 cups vegetable broth or water
  • 1 can diced tomatoes 14.5 oz can, undrained
  • 1 tbsp Italian seasoning for aromatic flavor
  • 1 cup frozen corn for sweetness
  • 1 cup chopped spinach or kale
  • 1 tsp salt to taste
  • 0.5 tsp black pepper to taste

Instructions

Preparation Steps

  • In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until fragrant, about 3 minutes. Next, add the carrots and celery, stirring occasionally for another 5 minutes until they begin to soften.
  • Stir in the diced zucchini and green beans, then pour in the vegetable broth and diced tomatoes. Add the Italian seasoning, giving everything a good stir.
  • Bring the soup to a boil, then reduce the heat and let it simmer for about 20 minutes. Add the corn and spinach during the last 5 minutes of cooking.
  • Finally, season with salt and pepper to taste before serving. Enjoy your warm and hearty vegetable soup!
