  • 1 cup long-grain white rice
  • 1 cup chicken broth For extra flavor
  • 0.5 cup diced tomatoes Canned or fresh, drained
  • 0.25 cup feta cheese A sprinkle for garnish
  • 2 tsp dried oregano Adds an herbal touch
  • 2 cloves garlic Minced for flavor
  • 1 tbsp olive oil For sautéing
  • salt To taste
  • pepper To taste

Instructions

Preparation Steps

  • Start by turning on the Instant Pot and selecting the sauté setting. Once hot, add the olive oil and sauté the minced garlic for about a minute until fragrant. Then, add the chicken thighs and season them with salt, pepper, and dried oregano. Sear the chicken on both sides for about 3-4 minutes until browned.
  • Next, pour in the chicken broth and scrape any bits from the bottom of the pot. Stir in the long-grain rice and diced tomatoes, then seal the lid.
  • Set the Instant Pot to manual pressure cooking for 10 minutes. After the timer goes off, allow for a natural release for 5 minutes before gently turning the valve to release any remaining pressure.
  • Once the pressure is released, remove the lid and fluff the rice with a fork. Serve topped with crumbled feta cheese and enjoy your meal!
