Preparation Steps

  • Start by preheating your oven to 350°F (175°C). Grease a standard loaf pan or line it with parchment paper to prevent sticking. In one bowl, mix together the diced peaches and set aside.
  • In a separate large bowl, combine your flour, sugar, baking soda, salt, and cinnamon. Whisk these dry ingredients together until they're well combined.
  • In another bowl, whisk together the eggs, oil, and vanilla extract. Once mixed, pour this wet mixture into the bowl of dry ingredients and stir just until combined. Be sure not to overmix.
  • Gently fold the diced peaches into the batter, ensuring they're evenly distributed. Pour the batter into your prepared loaf pan.
  • Bake in the preheated oven for about 60 minutes, or until a toothpick inserted in the center comes out clean. Let it cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
