These salted caramel cookie bars are a delicious treat that combines chewy cookies with a rich layer of salted caramel. Perfect for sharing or enjoying on your own!
Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish or line it with parchment paper for easy removal.
In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until it’s light and fluffy. This usually takes about 2-3 minutes.
Add in the eggs, one at a time, followed by the vanilla extract. Mix until well combined.
In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Spread half of the cookie dough into the prepared baking dish. Pour the salted caramel sauce evenly over the cookie layer, then spoon the remaining dough on top, spreading it as evenly as possible.
Bake in the preheated oven for about 25-30 minutes or until the edges are golden and a toothpick inserted into the center comes out clean.
Let the bars cool completely in the pan before cutting them into squares to serve. Feel free to drizzle extra caramel sauce on top for an even sweeter treat!
Notes
These cookie bars are best enjoyed fresh, but they can be stored in an airtight container at room temperature for up to a week.
