  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 medium onion sliced
  • 3 tbsp olive oil to keep everything nicely coated
  • 2 tbsp fajita seasoning store-bought or homemade
  • salt and pepper to taste
  • 8 flour tortillas for serving

Preparation Steps

  • Preheat your oven to 400°F (200°C). While it heats, get a large baking sheet ready by lining it with parchment paper for easy cleanup.
  • In a large bowl, toss the shrimp, bell peppers, and onion with olive oil, fajita seasoning, and a bit of salt and pepper. Make sure everything is well-coated.
  • Spread the mixture evenly on the prepared baking sheet. It’s okay if things are a little crowded — the shrimp will shrink as they cook.
  • Bake in the preheated oven for about 15-20 minutes until the shrimp are pink and cooked through and the veggies are tender.
  • Warm up your tortillas — either in a dry skillet or wrapped in foil in the oven — and then serve the shrimp and veggies in them. Enjoy!
