  • 1.5 lb ground beef Make sure to drain excess fat for a healthier soup.
  • 8 oz bacon Cooked and crumbled.
  • 1 medium onion Chopped.
  • 4 cloves garlic Minced.
  • 4 cups beef broth
  • 2 cups potatoes Diced.
  • 1 cup cheddar cheese Shredded.
  • 0.5 cup cream cheese Softened.
  • 1 tbsp Worcestershire sauce
  • 1 tsp mustard
  • 0.5 tsp black pepper

Preparation Steps

  • In a large skillet, brown the ground beef over medium heat. Drain any excess fat and add it to the slow cooker.
  • In the same skillet, cook the bacon until crispy, then crumble it and add it to the slow cooker along with the chopped onion and minced garlic.
  • Pour in the beef broth and add the diced potatoes. Stir everything together well.
  • Season with Worcestershire sauce, mustard, and black pepper. Cover the slow cooker and cook on low for 6-8 hours, or high for 3-4 hours.
  • About 30 minutes before serving, stir in the softened cream cheese and shredded cheddar cheese until melted and creamy.

Notes

This soup is best enjoyed warm, topped with extra crispy bacon and shredded cheese. It's a wonderful way to feed a crowd!
