  • Begin by preheating your oven to 350°F (175°C). Prepare a muffin tin by greasing it or lining it with paper cups. In a mixing bowl, whisk together the flour, sugar, baking powder, salt, and poppy seeds until they are well mixed.
  • In a separate bowl, combine the milk, vegetable oil, eggs, vanilla extract, lemon zest, and lemon juice. Mix these wet ingredients until they are fully incorporated.
  • Pour the wet ingredients into the dry ingredients and gently fold them together until just combined. Be careful not to overmix to keep the muffins light and fluffy.
